Dr. Kuchida is the leading expert in the Meat Image Japanese (MIJ) grading camera. This device reduces human error by providing an objective view of the carcass. Images are taken from the cut ribeye surface and predict marbling score, marbling fineness, ribeye area, fat color, meat color, and BMS grade.
